Get the coffee percolating and remove the rings from your fingers because we are about to get doughy!
Don’t worry, there are two reasons why I call these “Shortcut Biscuit Cinnamon Rolls”. There is zero time spent waiting for dough to rise or frosting to make. And you know what? They are just as delicious. I’m excited to share this recipe with you. It’s one of my all time favorites to make and serve.
Ingredients:
- 2 cups, white flour
- 1 tsp. salt
- 1 tsp. sugar
- 4 tsp. baking powder
- 4 tbsp. of shortening
- Milk (1/2-1 cup)
- Butter, sugar, brown sugar, cinnamon to your discretion
Directions:
- Preheat your oven to 400°;
- Mix the flour, salt, sugar and baking powder into a mixing bowl;
- Cut in the shortening with a fork until it looks like cornmeal;
- Add milk until you can work up the dough into a sticky ball;
- Flour your counter and roll out the dough (or just push around to the size you want it) into a 12 x 12 rectangle.
Spread the dough with butter, sugar, brown sugar and cinnamon. I don’t have exact measurements for these but I put a nice layer of butter on there. Don’t skimp with the sugars (approx. 1/2 cup each) and sprinkle cinnamon to taste. The butter and sugars give each roll it’s “gooey”.
Roll up and cut rolls about 1″ thick. Place in greased 8×8 pan and bake until slightly brown on the edges. Wash up, put your rings back on and pour yourself a cup of that coffee while you wait. Or if you’re like me, chase kids, warm up your coffee five times without drinking it and then realize you forgot to put on your rings while you’re taking sermon notes. #momlife.
This recipe makes about 8-9 rolls depending on how big you cut them.
If you have been following my two-month old baby blog, you know that there’s a story behind most of my recipes. I love how food and memories work. A smell, taste or sight of a certain food can put you right back in grandma’s kitchen, at a family reunion or at your mama’s table. That’s right where these put me. At age seven on a Sunday morning at my mama’s table listening to her play the piano.
Growing up, Sundays were golden. I absolutely loved Sunday at my house. They could have been crazy unbeknownst to me. And I only say that because now that I’m a mom, I know Sunday morning is anything but easy. Between getting everybody ready for church, preparing lunch and actually getting to church, all I can say is “whew”.
I remember waking up to the scent of these biscuit rolls baking and my mom playing the piano in the living room. She was the pianist/accompanist (there’s a difference, folks. Trust me!) for the worship team at church, so she used the time it took for the rolls to finish baking to practice.
Now, I must add, if you woke up to them already baking, you missed out on receiving one of the “ends” of dough before it got cut into rolls. There was no “save one so everyone can have one” agreement with the cook. In my mother’s words, “if you snooze, you lose!” and that very much applied here. It also applied to who got first dibs on the middle of the middle biscuit roll which was usually Dad. Looking back, he must’ve been watching the oven like a hawk because he ALWAYS got the middle. 🙂
The only time we experienced the wonder of these delicious rolls was on Sunday. Consequently, the only day of the week I make these rolls is (you guessed it) Sunday.
My brother and I were reminiscing about those Sundays at home as I made these with his girls a few weekends ago (on Sunday, no less). After church, mom would have a full course meal of usually roast, rice/potatoes and gravy, and a vegetable (dessert was ready in the refrigerator) ready and on the table by the time we had the table set. If there were any of those biscuit rolls or should I say “remains” left, they were secretly devoured in between filling glasses with water or setting the table. I still don’t know how she did it, but she owned the whole stay-at-home-mom gig as a farmer’s wife with three kids to take care of. I had and still have a great example and for that, I am thankful!
