We all know that the influx of peaches at the end of the summer find themselves in pies, cobblers, jams and jellies but have you tried them in a milkshake? The only milkshakes I remember making at home were these, with my dad! Check out this recipe:
Ingredients:
- 2 fresh peaches, sliced (remove the skin if you prefer);
- 3 heaping scoops of vanilla ice cream;
- 1/4 cup of milk (substitute the milk with half and half if you’re feeling extra today);
- 1/2 teaspoon vanilla.
Directions:
- Place all ingredients in a blender and blend until smooth;
- Serve up in whatever vessel you can find, sit down and enjoy!
It’s super simple and super GOOD if you’re into peaches.
So, who is “Coach Rickford”? He’s my dad, the recipe developer of this creamy peach treat. Mom wasn’t into that kind of thing so it was dad and all hands on deck when peach season came around! Every time he made these for us, it was in the evening after cross country practice. So he always had his black sweats and slippers on.
Dad was the high school cross country coach for eight years and a high school assistant and head wrestling coach for twenty-two years. So I remember those black sweats well! In the mornings before school, he would come home from practice all sweaty and purposely try to hug me as a joke while I was trying to eat my cheerios. I didn’t think it was as funny as he did! “Ewww! Gross, dad!”
He was a fantastic coach and you never knew what you were going to get when it was his turn to speak at the yearly awards assembly. He was a tough coach but he could build you up from your lowest point more than any other coach I knew. He could see potential from anyone. Your job as one of his athletes? Don’t you ever say “I can’t”.
Consequently, that rubbed off on to us. It’s a forbidden phrase, a statement that’s not allowed in our house and when we hear someone say “I can’t” it is like nails on a chalkboard. Yes. You. Can!
So now that we’re all pumped up, let’s go make some peach milkshakes!
